Preheat the oven to 180 C / Gas 4. Grease a 23cm springform cake tin and line with baking parchment.
In a bowl, beat together the butter and the sugar until light and fluffy. Add the egg and beat well along with the vanilla extract and the oil.
In a separate bowl, combine the flour, bicarb, spices, salt and almonds and mix well. Fold into the wet ingredients. Arrange the apples in the base of the prepared cake tin and pour the cake mixture over, smoothing the top and pressing down slightly.
Bake in the preheated oven for 60 to 70 minutes until the apples are soft and a skewer inserted into the centre comes out clean. Remove from the oven and serve warm or cold.
