Pork and apple burgers with chilli sauce

About this recipe: Hamburgers are always popular for casual meals, but can be high in saturated fat. This lighter version, made with lean minced pork, is just as flavoursome, and fresh apples and spring onions contribute to your five-a-day. They're delicious spread with sweet chilli sauce. Can also be barbecued.

Ingredients
Serves: 4 

  • 300g lean minced pork
  • 2 small green dessert apples, cored and grated
  • 75g fresh wholemeal breadcrumbs (made from 4 slices wholemeal bread with the crusts removed)
  • 4 spring onions, very finely chopped
  • 1 garlic clove, crushed
  • 25g fresh root ginger, peeled and finely chopped
  • 1 tsp dried thyme
  • pinch of cayenne pepper
  • TO SERVE cos lettuce leaves, halved, ½ cucumber, thinly sliced, 4 soft white floured baps, split, 4 tsp sweet chilli sauce

Method

  1. Put the pork, apples, breadcrumbs, spring onions, garlic, ginger, thyme and cayenne pepper in a large bowl. Mix and squeeze together.
  2. Shape the mixture into 4 balls, then press into flat patties about 10cm in diameter and 1.5cm thick. Preheat the grill to moderate and set the shelf on the lower runner position.
  3. Place the burgers on a sheet of foil in the grill pan. Grill for about 15 minutes, turning once, until golden brown and cooked through.
  4. Divide the lettuce leaves and cucumber slices among the bun bases. Place the burgers on top, then spread with 1 tsp of the chilli sauce. Cover with the bun tops and serve immediately.

variation

Using bottled chilli sauce is a quick option, but it doesn't take long to make your own. Put 1 finely sliced red chilli in a small saucepan with ½ tbsp arrowroot. Slowly stir in 4 tbsp fresh lime juice, 2 tbsp rice vinegar, 1 tbsp soft light brown sugar and ½ tbsp nam pla (Thai fish sauce), stirring to blend. Put the pan over a high heat and bring to the boil, stirring until thickened. Remove from the heat and leave to cool.

cook's tip

The pork patties can be shaped up to a day in advance and chilled until required. Just remember to remove them from the fridge 10–15 minutes before you want to cook them. They can also be frozen.
