About this recipe: Hamburgers are always popular for casual meals, but can be high in saturated fat. This lighter version, made with lean minced pork, is just as flavoursome, and fresh apples and spring onions contribute to your five-a-day. They're delicious spread with sweet chilli sauce. Can also be barbecued.

Using bottled chilli sauce is a quick option, but it doesn't take long to make your own. Put 1 finely sliced red chilli in a small saucepan with ½ tbsp arrowroot. Slowly stir in 4 tbsp fresh lime juice, 2 tbsp rice vinegar, 1 tbsp soft light brown sugar and ½ tbsp nam pla (Thai fish sauce), stirring to blend. Put the pan over a high heat and bring to the boil, stirring until thickened. Remove from the heat and leave to cool.
The pork patties can be shaped up to a day in advance and chilled until required. Just remember to remove them from the fridge 10–15 minutes before you want to cook them. They can also be frozen.
These have become a family favourite, everyone enjoys these. Very tasty, sometimes I change it a little with red onion instead of spring onion. often less apple used but the fresh ginger is definitely what makes them special. I don't get hung up on the amount of pork used either I just use whatever the packet size has been from whichever shop.They work ok shallow frying them as well and nice served with wedges. love these. - 24 Jul 2015
