Crispy potato cakes with ham

    These crispy potato pancakes are super tasty thanks to a little added ham and Cheddar cheese. Enjoy with some scrambled eggs or even some baked beans.

    Serves: 6 

    • 4 large potatoes, peeled and finely grated
    • 1 white onion, grated
    • 2 eggs, lightly beaten
    • 2 tablespoons butter
    • salt and pepper, to taste
    • 2 spring onions, chopped
    • 110g chopped ham
    • 2 tablespoons grated Cheddar cheese
    • 2 tablespoons olive oil

    1. Combine all of the ingredients, except the oil, in a bowl and mix well with hands. Form into potato pancakes.
    2. Warm the oil in a frying pan over a medium heat then place the potato cakes in the pan. Fry for 8 to 10 minutes on each side until golden brown. Remove from the pan and blot with kitchen paper if necessary before serving. Serve hot.
