4 large potatoes, peeled and finely grated
1 white onion, grated
2 eggs, lightly beaten
2 tablespoons butter
salt and pepper, to taste
2 spring onions, chopped
110g chopped ham
2 tablespoons grated Cheddar cheese
2 tablespoons olive oil

Combine all of the ingredients, except the oil, in a bowl and mix well with hands. Form into potato pancakes.
Warm the oil in a frying pan over a medium heat then place the potato cakes in the pan. Fry for 8 to 10 minutes on each side until golden brown. Remove from the pan and blot with kitchen paper if necessary before serving. Serve hot.
