About this recipe: This lovely sausage and apple meatloaf is a refreshing change to beef meatloaf. Best served with mashed potato and seasonal vegetables.


Serves: 6 

  • 450g sausage meat
  • 200g smoked streaky bacon, finely chopped
  • 1/2 onion, minced
  • 2 eggs, lightly beaten
  • 110g dried breadcrumbs
  • 2 small apples - peeled, cored and finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley

  1. Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin.
  2. In a large mixing bowl, combine all of the ingredients and mix well with hands. Transfer to the prepared loaf tin and smooth the top.
  3. Bake in the preheated oven for 90 minutes until the loaf is no longer pink in the centre. Remove from the oven, slice and serve.
