    These creamy and flavourful vegetarian Gruyère cheese and onion tarts are the perfect starter to an elegant dinner party.

    Makes: 6 Gruyère cheese and onion tarts

    • 500g puff pastry
    • 2 tablespoons olive oil
    • 2 small white onions, sliced thinly
    • 2 cloves garlic, minced
    • 250g grated Gruyère cheese
    • 2 tablespoons chopped fresh chives
    • salt and pepper, to taste

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray. On a floured surface, roll out the pastry and cut out 6 circles with a 12cm diameter. Arrange the pastry discs on the prepared baking tray.
    2. Meanwhile heat the olive oil in a frying pan and add the onion and garlic. Spoon onto the prepared pastry discs. Sprinkle over the cheese and chives then season.
    3. Bake in the preheated oven for 10 to 15 minutes until the pastry is golden brown and the cheese is melted. Remove from the oven and serve hot.
