Preheat your oven to 170 C / Gas 3.
Break the 125g dark chocolate into pieces and place into a heatproof bowl set over a pan of hot water. Heat, stirring occasionally, until melted.
Place the flour, cocoa, bicarbonate of soda and salt into a large bowl and mix well.
In another bowl, cream the butter and two sugars together until light and fluffy. Add the melted dark chocolate and stir well.
Beat in the vanilla extract and crack in the egg, then mix in the dry ingredients. After, stir in the dark chocolate chips.
Then, line a baking tray with parchment. Evenly scoop out (with a spoon, cookie scoop or ice-cream scoop) 12 equal portions of the cookie mixture. Make sure they are about 6cm apart as they will spread. Do not flatten them.
Transfer to the preheated oven and bake for 18 minutes, then test with a skewer - it should come out clean and not wet with batter. If your pierce a chocolate chip, try again.
You will see that the cookies are really soft but just let them to cool on the baking tray for 4 to 5 minutes, then they will be ready to serve once they are warm.
