Syrup and ginger loaf cake

    This delightful syrup and ginger cake is a firm tried and tested favourite in our household and we love to eat this cake warm with ice cream.

    Serves: 8 

    • 100g butter
    • 85g soft brown sugar
    • 3 eggs
    • 55g golden syrup
    • 300g self raising flour
    • 1 teaspoon ground nutmeg
    • 2 teaspoons ground ginger
    • 100ml full fat milk
    • 1 teaspoon baking powder

    1. Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin and line with baking parchment.
    2. In a bowl, beat together the butter and sugar until pale and creamy. Add the eggs, one at a time beating well after each addition. Mix in the remainder of the ingredients until well blended. Spoon into the prepared loaf tin and smooth the top.
    3. Bake in the preheated oven for 90 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin before transferring to a serving plate and slicing.

    DO NOT BAKE THIS FOR 90 MINUTES. 45 minutes was a little too much and produced an over-browned and somewhat dry cake. The taste was good though and with some cream it was okay.  -  07 Dec 2016
