Delight family and friends on a special occasion with this wonderful slow cooker port wine duck recipe. Best served with seasonal vegetables and a nice bottle of red.

2 tablespoons butter
chopped fresh tarragon, to taste
salt and pepper, to taste
1 (1.8kg) duck, jointed
2 tablespoons olive oil
4 apples - peeled, cored and roughly chopped
3 pears - peeled, cored and roughly chopped
1/2 bottle port wine
300ml chicken stock
1 tablespoon lemon juice
juice of 1/2 orange

Preheat the slow cooker to High. Mix together the butter, tarragon and seasoning and mash into a herb butter. Wipe the duck pieces dry then rub all over with the herb butter. Warm the oil in a frying pan over a high heat then brown the duck pieces on all sides.
Meanwhile, arrange the apples and pears in the base of the slow cooker. When the duck is browned, lay on top of the fruit then pour over the wine and stock. Add the lemon and orange juice. Cook on High for 4 to 6 hours or until the duck is an even brown colour throughout or cooked to desired taste.
Prior to serving, remove the duck from the slow cooker using a slotted spoon and crisp the skin a little under a hot grill. Strain the remaining liquid in the slow cooker into a serving jug and serve with the duck.
