Christmas fruit brack

    Lighter than Christmas Cake, this is a lovely fruit loaf or brack. And it's fat-free!

    Makes: 1 loaf cake

    • 1 black tea bag
    • 350g dried fruit (dates, figs, cranberries, glace cherries, sultanas)
    • 200g plain flour
    • 50g ground almonds
    • 75g soft brown sugar
    • 2 teaspoons baking powder
    • zest of 1 clementine
    • 1 egg
    • For the topping
    • 1 tablespoon demerara sugar
    • 1 teaspoon favourite spices (nutmeg, cinnamon, ginger)

    1. Steep 1 tea bag in 250ml boiling water. Remove tea bag and add dried fruits. Leave for 2 hours, or overnight.
    2. Heat oven to 170 C / Gas 3.
    3. Add the dry ingredients to the tea and fruit mix. Beat the egg and mix in. Pour into a lined 900g loaf tin. Sprinkle demerara sugar and spices on top.
    4. Bake for 55 to 60 minutes, until a skewer comes out clean. Remove from oven, and allow to cool. Serve on its own or with a scraping of butter for the perfect afternoon treat!
