Italian style chicken casserole

    Everytime I serve this dish people want the recipe. And there are never any leftovers. A simple dish created from bits I had leftover one Sunday evening. Now a firm family favourite. Very tasty and easily amended to suit family taste buds.

    Serves: 4 

    • olive oil
    • 500g chicken breasts or thighs
    • 1 chicken stock cube
    • 1 onion, diced
    • 3 garlic cloves, crushed
    • 1 red chilli, deseeded
    • 1 carton passata
    • 1 (400g) tin chopped tomatoes
    • 2 tablespoons fresh thyme leaves
    • 2 tablespoons Italian seasoning
    • 200g chorizo, chopped
    • 1 (400g) tin cannellini beans, drained
    • 500g gnocchi

    1. Heat a drizzle of olive oil in a pan over medium high heat, then add the chicken. Cook until the chicken is white. Crumble in the stock cube.
    2. Add the onion, garlic and chilli; cook on low heat to ensure they don't crisp.
    3. Once the onion is softened, add the tin and carton of tomatoes. Add the seasoning. Bring to the boil, then reduce to a simmer.
    4. Once simmering add the beans and chorizo, and simmer with the lid on for at least 40 minutes.
    5. During the last 5 minutes of cooking, add the gnocchi and cook till tender.

    Make it in a slow cooker

    Can also be cooked in a slow cooker - just put all the ingredients in together except for the gnocchi and cook on low for 8 hours. If looking slightly dry add water to get the texture you desire. Boil the gnocchi separately, then combine with the slow cooker mixture to serve.

    We love this recipe and a version of it crops up every 8 weeks or so in our weight loss plans now. Its great in Winter but is not too heavy to work all year round. Everytime we do it, we get a lot of great feedback -  -  02 Mar 2014
