Heat the olive oil in a pan and add the chicken - cook until the meat is white. Add the stock cube.
Add the onion, garlic & chilli - cook on low heat to ensure they don't crisp.
Once the onion is soften add the tin & carton of tomatoes. Add the seasoning. Bring to the boil & simmer.
Once simmering add the beans and chorizo and simmer with the lid on for at least 40 mins.
Can also be cooked in a slow cooker - just put all the ingredients in together & cook on low for 8 hours. Serve with crust bread. If looking slightly dry add water to get the texture you desire. The chorizo adds lots of flavours - however add more chilli for a bit more of a kick.
We love this recipe and a version of it crops up every 8 weeks or so in our weight loss plans now. Its great in Winter but is not too heavy to work all year round.
