Apple rock cakes

    Ingredients
    Makes: 16 apple rock cakes

    • 110g butter
    • 300g self raising flour
    • 85g golden caster sugar
    • 2 teaspoons baking powder
    • 3 apples - peeled, cored and finely chopped
    • 1 large egg, lightly beaten

    Method

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray.
    2. In a bowl, rub the butter into the flour until the mixture resembles fine breadcrumbs. Add the remainder of the mixture and form into mounds, arranging on the prepared baking tray.
    3. Bake in the preheated oven for 20 minutes until golden brown. Remove from the oven and allow to cool before serving.
