Lemon pancakes

    These lemon pancakes are ever so easy to make and just perfect for Pancake Day. Serve dusted with a little icing sugar.

    Serves: 4 

    • 400ml milk
    • 110g caster sugar
    • 250g plain flour
    • 2 eggs, beaten
    • 1 tablespoon baking powder
    • zest and juice of 1 lemon
    • 1 tablespoon butter
    • icing sugar, for dusting

    1. Combine all of the ingredients, except the butter and icing sugar, in a mixing bowl and whisk until a smooth batter forms.
    2. In a frying pan over a medium heat, melt the butter. Add a ladle of the batter then pick up the pan and move it around to spread the mixture very thinly over the entire base of the pan. Flip over and cook for 1 minute. Repeat. Serve immediately dusted with icing sugar.

    Really liked the bright lemon flavor in these pancakes. I accidentally added baking soda instead of baking powder and, unfortunately, that taste was also dominant (my fault, not the recipe's). Definitely will make these again paying more attention to the proper ingredients :-)  -  15 Feb 2015
