Welsh winter warmer soup

    A filling and delicious soup with lots of veg and bacon for smoky flavour. This is a cheap and healthy recipe. Extremely moreish and ideal for a quick evening or lunchtime meal.

    Serves: 4 

    • 3 carrots
    • 2 leeks
    • 3 medium potatoes
    • 1 small cabbage
    • 4 rashers smoked bacon, chopped
    • 1 chicken stock cube
    • salt and pepper to taste
    • creme fraiche, to taste
    • grated Cheddar cheese (optional)

    1. Trim and chop veg and put into a large pan or saucepan. Add hot water to just cover the veg, then crumble in the stock cube.
    2. Fry off chopped bacon and add to saucepan with veg.
    3. Bring to the boil, then reduce to a simmer and cook until veg is tender. Season with black pepper and salt if needed. Add a little creme fraiche and stir.
    4. Serve in soup bowls or breakfast bowls. Add grated cheese over top, if desired, and enjoy.

    Cook's notes

    To make it go further, serve with garlic bread. Can be blended for a finer soup if using as a starter for a dinner party!
