Rice and bean casserole

    A healthy, vegan and vegetarian slow cooker casserole. At the moment I am on a diet, so I am looking for foods that are really filling but low in calories. I split it all up into three batches and worked out it would be roughly about 270 calories a batch. It is really filling and will keep you going for hours.

    Serves: 3 

    • 1 large onion, diced
    • 1 (400g) tin peeled plum tomatoes
    • 1 (400g) tin cannellini beans, rinsed
    • 1 (125g) bag of boil in the bag brown rice
    • 1/2 teaspoon chilli powder
    • 1/2 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon ground cumin
    • chopped fresh parsley, to taste
    • 500ml water

    Prep:5min  ›  Cook:4hr  ›  Ready in:4hr5min 

    1. Heat the onions and tomatoes in pan until soft.
    2. Add the uncooked rice and beans to a slow cooker, along with all of the remaining ingredients.
    3. Cook for 4 hours on high, or 6 to 8 hours on low.

    Very bland, needs a lot more spices. Found the rice was very mushy too, mind I did you white rice instead of brown? Nice idea, think I would add more spices if I was to make it again x  -  18 Jun 2015
