White chocolate blondies

    These blondies are absolutely the best! They are light, fluffy and taste great too! After you've made them once you'll want to make them again and again. Easy to make.

    Makes: 9 blondies

    • 100g white chocolate
    • 100g butter
    • 160g golden caster sugar
    • 2 eggs
    • 75g plain flour
    • 1 teaspoon vanilla extract
    • 50g nuts (optional)

    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Melt the white chocolate with the butter and allow to cool slightly.
    2. Beat the eggs with the sugar and then beat in the white chocolate mixture.
    3. Sift in the flour and mix well, adding the vanilla. Fold in nuts, if using. Pour into a lined 20cm square baking tin.
    4. Bake for 20 to 25 minutes at 180 C / Gas 4.
    5. Allow to cool and cut into squares.

    very simple recipe I use as the base for a variety of flavours, easily adapted. Usually white chocolate chunks and a generous handful of frozen raspberries, or a few swirls of peanut butter/chocolate spread. I add a small pinch of baking powder to get a better rise as it doesn't always rise very well, might be my oven. Favourite in this household.  -  06 Nov 2015
