Easy one-pan breakfast fry up

    My kids love this for breakfast and it is so easy to make and add your own touch! Almost any veg can be added, and you can use ham instead of bacon.

    Serves: 2 

    • 4 rashers streaky bacon, chopped
    • 2 potatoes, peeled and diced
    • 1/8 teaspoon garlic salt
    • 1/8 teaspoon salt
    • 1/8 teaspoon ground black pepper
    • 3 eggs, beaten
    • 4 tablespoons grated Cheddar cheese
    • Optional
    • 1/2 onion, chopped
    • 1/2 green pepper, chopped

    1. Cook bacon in a frying pan over medium-high heat until evenly brown. Remove and place on kitchen paper to drain.
    2. Add potatoes to bacon dripping in the pan, and season with garlic salt, salt and black pepper. Cook until potatoes are soft. (If using onion and green pepper, add when potatoes are half done.)
    3. When potatoes are tender, add bacon. Pour eggs over potatoes and cook until firm. Spread with cheese and cover with lid until melted.


    You can add a bit of milk to the eggs for fluffier dish.
