Treac's pear and ginger pastries

    This yummy pastry is fun and easy to make! If you love ginger, you'll love these. You can reduce the amount of ginger if you prefer a lighter flavour.

    Makes: 6 pastries

    • 1 sheet shop bought puff pastry
    • 3 large pears, peeled and roughly chopped
    • 1 1/2 tablespoons grated root ginger
    • 2 tablespoons caster sugar
    • 1 egg
    • demerara sugar for sprinkling

    1. Combine pears, ginger and sugar in a mixing bowl. Mix well.
    2. Cut the pastry sheet into six even squares. Put a fairly even amount of the pear mixture into the middle of each pastry square.
    3. Next crack an egg into a cup and whisk with a fork. Then egg wash the sides of the pastry. Fold in half to make a triangle shape. Seal the edges so no filling can come out.
    4. Egg wash the top of the pastry and sprinkle demerara sugar on top for a crunchy top.
    5. Put in the oven at 180 C / Gas 4 for 18 to 20 minutes. Take out and enjoy warm.
