Hot green bean salad

    A quick and simple hot salad for those special occasions. Great for vegetarians or alongside chicken and pork dishes.

    Serves: 6 

    • 900g (2 lb) green beans, trimmed
    • juice of 1 lemon, or to taste
    • 4 tablespoons olive oil
    • salt and pepper, to taste

    1. Bring a saucepan of water to the boil and add the beans. Cover and cook over a high heat for 3 to 4 minutes or so until softened a bit but still with a crunch. Drain and pour into a large warmed bowl.
    2. Add the lemon juice, olive oil, salt and pepper to taste and toss to combine everything together well and serve.
