Beef and oat casserole

    Oats are nutritious and add flavour and texture to lots of dishes, like our beef and oat casserole, which contains one of your five-a-day in each serving and is great served with baked or mashed potatoes.

    Serves: 4 

    • 1 tablespoon rapeseed oil
    • 400g lean braising steak, diced
    • 700ml beef stock
    • 25g oats
    • 1 tablespoon wholegrain mustard
    • 4 sprigs thyme
    • 400g shallots
    • 100g frozen peas

    1. Preheat the oven to 180 C / Gas 4.
    2. Heat the oil in a large frying pan and fry the steak for 4 to 5 minutes until browned. Add the stock, oats, mustard and thyme then season with black pepper. Bring to the boil.
    3. Transfer to an ovenproof casserole dish, cover and cook for 1 hour, stirring in the shallots half way through. Stir in the peas 10 minutes before the end of cooking.
    4. Great served with jacket potatoes.


    For extra richness, replace half the stock with red wine and serve with mashed potatoes.
