Roasted Alexanders buds

    These roasted Alexanders buds are a fantastic side dish and work especially well alongside fish and shellfish. Use in place of broccoli for a adventurous new treat.

    Serves: 4 

    • 450g Alexanders buds
    • 3 tablespoons olive oil
    • 2 cloves garlic, minced
    • salt and pepper, to taste
    • 1 teaspoon chopped fresh rosemary

    1. Preheat the oven to 180 C / Gas 4.
    2. Toss the Alexanders buds in the olive oil, garlic, salt, pepper and rosemary. Spread out over a baking tray.
    3. Bake in the preheated oven for 8 to 10 minutes until tender. Remove from the oven and serve.


    The buds of the Alexanders plant are a nutritious and flavourful wild food, abundant during spring months particularly in the southern coastal counties.
