    About this recipe: A healthy alternative to deep fried bhaji, but still packed with authentic flavour. Serve as a starter with a coriander and cucumber raita or as a healthy snack.

    Ingredients
    Serves: 4 

    • low cal spray
    • 4 onions, sliced
    • 1 tablespoon gram flour
    • 1 1/2 teaspoons ground cumin
    • 1 1/2 teaspoons ground coriander
    • 1 tablespoon tomato puree
    • 1 teaspoon grated root ginger
    • salt and pepper
    • 1 egg, beaten

    Method

    1. Spray a deep frying pan with cooking spray and place over medium heat. Add onions and sweat for 10 minutes, or till soft but not soggy.
    2. Tip the onions into a mixing bowl. Add all remaining ingredients and mix well. Place tablespoonfuls of the mixture onto a baking tray lined with parchment.
    3. Bake in a preheated 180 C / Gas 4 oven for 15 minutes. Remove from oven, spray with cooking spray and return to the oven to bake a further 10 minutes, or till crispy.
