Sausage Casserole (serves 4)

    We used to get sausages in packs of 8, but lately we've been getting them in packs of 6, which would mean 1 1/2 sausages each, so I came up with this casserole to make them go further. The sausages are bulked out with plenty of veg. I like to serve this casserole with mashed potatoes.

    Ingredients
    Serves: 4 

    • 2 teaspoons olive oil
    • 2 celery sticks, chopped
    • 2 carrots, chopped
    • 1 onion, chopped
    • 100g mushrooms, sliced
    • 1/2 leek, sliced
    • 1 garlic clove, finely sliced
    • 6 sausages, cooked and sliced
    • 400g tin chopped tomatoes
    • 1 teaspoon dried oregano
    • 1 tablespoon tomato puree
    • 400g tin baked beans

    Method

    1. Heat the olive oil in a casserole and gently fry the veg for a few minutes, then add the sausages and cook for a few minutes more.
    2. Add the tomatoes, oregano and tomato puree and simmer for 5 minutes.
    3. Add the beans and simmer for a further 10 minutes until everything is cooked.

    Tip

    I sometimes add some cabbage, if I've got a little bit that needs using up.
