Leek and cauliflower mash

    This is a wonderful winter low carb side dish and a healthier choice than mashed potatoes. Serve alongside a variety of main meals such as roast chicken, sausages or pies.

    Serves: 4 

    • 1 large head cauliflower, cut into florets
    • 3 leeks, finely sliced
    • 2 tablespoons salted butter
    • salt and pepper, to taste
    • 2 tablespoons soured cream
    • chopped fresh parsley, to taste

    1. Bring a large pan of water to the boil and add the cauliflower. Cook for 8 to 10 minutes until tender. For the last 2 minutes add the sliced leek. Drain through a colander and return to the hot pan. Mash together with the butter, seasoning and soured cream. Purée, using a handheld liquidiser for an extra creamy mash. Serve immediately with some chopped fresh parsley.
