Fancy sea bass ceviche

    This delightful sea bass ceviche is a recipe handed down to me by an old fishmonger friend who use to make this whenever fresh sea bass would come in. Totally delicious and great as a special treat.

    Serves: 6 

    • 450g skinned fresh sea bass, boned and chopped
    • juice of 3 limes
    • 1 red onion, chopped
    • 1 tomato, chopped
    • 4 tablespoons olive oil
    • 1 tablespoon white vinegar
    • 1 small red chilli, seeded and minced
    • 3 tablespoons chopped fresh coriander
    • juice of 1/2 orange
    • salt and pepper, to taste

    1. Combine all of the ingredients together and mix well. Lay a neat layer of ice in the base of a glass serving dish (the ceviche is going to be laid on top, so try to avoid any gaps). Spoon the ceviche on top and serve immediately.
