Pear and goat's cheese salad

    This pear and goat's cheese salad is sweet, crunchy, creamy and nourishing. Perfect as a special stand alone salad, or as part of a larger meal.

    Serves: 2 

    • 2 ripe pears, sliced thinly
    • 2 handfuls rocket leaves
    • 1/2 cucumber sliced thinly
    • 55g goat's cheese, crumbled
    • 2 tablespoons runny honey
    • 4 tablespoons olive oil
    • 1 teaspoon Dijon mustard
    • 1 teaspoon red wine vinegar
    • salt and pepper, to taste

    1. In a bowl, combine the pear, rocket leaves and cucumber. Toss then top with goat's cheese. In a jam jar with a tight fitting lid, combine the honey, olive oil, mustard and vinegar then shake vigorously for 15 seconds. Drizzle over the salad and season well.
