About this recipe: Welsh rarebit is ever so easy to whip up for an easy dinner and is very popular with the kids. Serve with a little salad on the side for a complete meal.

Serves: 4 

  • 4 to 6 tablespoons milk
  • 300g Cheddar cheese, grated
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon mustard powder
  • salt and pepper, to taste
  • 1 egg yolk, whisked
  • 4 thick slices bread
  • butter, to taste

  1. In a saucepan over a low heat, combine the milk, cheese, Worcestershire sauce, mustard powder and seasoning and stir until the cheese has melted and the sauce has thickened. Add a tablespoon of this cheese mixture to the egg yolk and beat well. Once mixed, pour into the saucepan and stir for 2 to 3 minutes over a low heat.
  2. Toast the bread and butter to taste. Pour the cheese mixture over the bread then pop under the grill for a few minutes to brown the top. Serve hot.
