Fresh peach cake

    Fresh peaches are just incredible in this cake and result in a fruity, moreish, moist cake just heavenly on lazy summer afternoons.

    • 200g caster sugar
    • 150g unsalted butter
    • 125g plain flour
    • 180ml milk
    • 1/4 teaspoon salt
    • 2 teaspoons baking powder
    • 2 fresh peaches, stoned and sliced

    1. Preheat oven to 180 C / Gas 4. Lightly grease and line one 20cm cake tin with baking parchment.
    2. Cream together the sugar and butter. Add the flour, milk, salt, and baking powder. Mix well and pour into prepared cake tin. Spread the fruit evenly over the top of the cake.
    3. Bake in the preheated oven for 50 minutes until browned on top and a skewer inserted into the centre comes out clean. Remove from the oven and cool before slicing and serving.
