Diane's carrot and coriander soup

    A light and refreshing soup consisting of carrots, onions, potato and coriander. Easy to make and always a favourite.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 clove garlic, chopped
    • 1 medium onion, chopped
    • 5 medium carrots, chopped
    • 1 medium potato, peeled and chopped
    • 2 teaspoons chopped fresh coriander
    • 900ml boiling water
    • 2 vegetable cubes
    • salt and pepper to taste

    1. Heat the oil on low heat. Add the garlic and onion. Cook for 2 to 3 minutes until starting to soften.
    2. Add carrots, cook for 2 minutes. Add potato and stock, and bring to the boil. Lower heat, simmer for 20 minutes until carrots and potato are soft.
    3. Add coriander, simmer for 10 to 15 minutes.
    4. Cool slightly and puree using a hand held blender. Reheat gently and serve in warm bowls.
