Whole baked trout with almonds

    Trout is a such a wonderful fish and has a fabulous flavour, combine with almonds and lemon - hey presto. My husband and I particularly enjoy trout for special occasions because there is something nice about each of us having a whole fish to ourselves.

    Serves: 2 

    • 140g butter
    • 2 tablespoons chopped fresh chives
    • 2 tablespoons chopped fresh parsley
    • 1 tablespoon lemon juice
    • 2 whole trouts, cleaned and gutted
    • 1 lemon, sliced thinly
    • sea salt, to taste
    • pepper, to taste
    • 85g flaked almonds

    1. Preheat the oven to 180 C / Gas 4.
    2. Soften half of the butter and mix with the fresh herbs and lemon juice. Rub the trout generously with the butter then lay in a baking dish. Neatly lay the sliced lemon on top of each fish then season generously.
    3. Bake in the preheated oven for 20 to 25 minutes until the fish is easily flaked with a fork. Remove from the oven. Transfer to serving plates.
    4. Meanwhile, melt the remainder of the butter and gently fry the almonds until golden brown. Pour over the fish to serve.
