About this recipe:
This is a tasty quick rice dish witch is great for any occasion and the kids will love it.
1 tsp sunflower oil
100g chorizo sausage, skin removed and chopped
225g easy cook long grain rice
400g can chopped tomatoes
450ml hot chicken stock
1 tsp mixed herbs
3 skinless chicken breasts cubed
1 red and green pepper cubed
50g frozen peas
6 spring onions chopped
- Heat the oil in a large pan. Add the chorizo and onions and cook for2-3 minutes,until the paprika oil from the chorizo is released.
- Add the chicken and cook for 3-4 minutes until lightly browned on all sides. Stir in the rice until coated in the oil.
- Add the tomatoes,stock and herbs. Cover and simmer for 15 minutes,stirring occasionally.
- Add the peppers,peas and the spring onions and cook,covered for a further 10 minutes,until the rice is tender and most of the liquid is absorbed.
