    About this recipe: This is a tasty quick rice dish witch is great for any occasion and the kids will love it.


    • 1 tsp sunflower oil
    • 100g chorizo sausage, skin removed and chopped
    • 1 onion,chopped
    • 225g easy cook long grain rice
    • 400g can chopped tomatoes
    • 450ml hot chicken stock
    • 1 tsp mixed herbs
    • 3 skinless chicken breasts cubed
    • 1 red and green pepper cubed
    • 50g frozen peas
    • 6 spring onions chopped


    1. Heat the oil in a large pan. Add the chorizo and onions and cook for2-3 minutes,until the paprika oil from the chorizo is released.
    2. Add the chicken and cook for 3-4 minutes until lightly browned on all sides. Stir in the rice until coated in the oil.
    3. Add the tomatoes,stock and herbs. Cover and simmer for 15 minutes,stirring occasionally.
    4. Add the peppers,peas and the spring onions and cook,covered for a further 10 minutes,until the rice is tender and most of the liquid is absorbed.
    5. Enjoy!
