About this recipe: Fresh puréed strawberries make this no bake strawberry cheesecake irresistibly delicious. A perfect way to celebrate local strawberries when in season. Fruity, classic, refreshing.


Serves: 10 

  • For the cheesecake
  • 175g digestive biscuits, crushed
  • 75g butter, melted
  • 55g caster sugar
  • 250g strawberries, sliced
  • 1 tablespoon water
  • 1 tablespoon lemon juice
  • 2 leaves gelatine
  • 180ml double cream
  • 100g thick strawberry yoghurt
  • 325g cream cheese, softened
  • For the topping
  • 6 whole strawberries
  • 50g dark chocolate, melted

    For the cheesecake:

  1. Line a 20cm springform cake tin with baking parchment. Combine the digestives and butter in a bowl and mix well. Press into the base of the prepared cake tin.
  2. In a saucepan over a medium heat, combine the caster sugar and strawberries along with the water and lemon juice. Cook for 20 minutes over a low to medium heat until the strawberries are soft. Transfer to a food processor and blend until smooth. Press through a sieve into a clean saucepan. Soak the gelatine leaves in cold water for 5 to 6 minutes. Squeeze out any excess liquid then add to the strawberry purée and warm over a low heat until dissolved.
  3. In a large mixing bowl, whisk the double cream until light and fluffy, then mix in the yoghurt and cream cheese. Gradually add the strawberry purée mixture and whisk until light and airy. Spoon into the prepared cake tin and smooth over the biscuit base. Gently smooth the top of the cheesecake. Chill in the fridge for 6 hours or overnight.

  5. Line a baking tray with baking parchment. Dip the strawberries into the melted chocolate then lay on the prepared tray. Chill in the fridge until the chocolate has hardened.
  6. Remove the cheesecake from the fridge and carefully pop out of the cake tin. Arrange the chocolate covered strawberries on top of the cheesecake in a circle, pointing outwards. Serve.
