Very lime cheesecake

    This lime cheesecake is well worth the wait! It takes about 8 hours to set, so I recommend leaving in the fridge overnight.

    Serves: 12 

    • 1 packet digestive biscuits, crushed
    • 55g butter, melted
    • zest and juice of 4 limes
    • 125g cream cheese, softened
    • 1 (397g) tin condensed sweetened milk

    1. Combine the crushed biscuits, melted butter and 1 teaspoon of the lime zest, and mix.
    2. Line a 23cm springform cake tin with the mixture. Place dish in the fridge while you make the filling.
    3. Put the cream cheese in a large bowl and microwave for about 30 seconds. Stir and add the tin of condensed milk, the lime juice and remaining zest. Add one at a time, stirring after each addition.
    4. Spoon this mixture over the base and place it back in the fridge to set for 8 hours.
