Kedgeree with smoked mackerel

    This is a recipe I've made up to fit in with the Slimming World eating plan and a real family favourite. It comes within a £5 budget to feed a family of 4. Works out to 1 syn per portion on Slimming World.

    Serves: 4 

    • cooking spray
    • 1 large onion, diced
    • 1 tablespoon medium curry powder
    • 280g easy cook rice, boiled and cooled
    • 285g pack smoked mackerel fillets, flaked
    • 150g petit pois peas, boiled
    • 4 hard boiled eggs, peeled and quartered

    1. Spray a frying pan with cooking spray. Add onion and cook till soft, then add curry powder and stir to coat.
    2. Add the rice, mackerel and peas. Stir and cook for 5 to 8 minutes, or till warmed through. Serve with quartered boiled egg on top of each portion.

    Get ahead

    Make this dish even easier by cooking the rice, peas and the eggs the day before. Simply keep in the fridge till needed.
