Old style rock buns

    A traditional style rock bun that tastes beautiful. Well suited for any occasion and perfectly rocky, the way any good rock bun should be.

    Makes: 12 old style rock cakes

    • 225g plain flour
    • 1 pinch salt
    • 1 teaspoon baking powder
    • 110g butter or margarine
    • 110g brown sugar
    • 85g currants or mixed fruit
    • 30g chopped candied peel
    • grated nutmeg, to taste
    • 1 egg
    • 1 tablespoon milk, as needed

    1. Preheat the oven to 200 C / Gas 6. Grease a baking tray.
    2. Sift together the flour, salt and baking powder. Rub in the butter or margarine until the mixture resembles fine breadcrumbs. Add the sugar, currants or mixed fruit, peel and grated nutmeg.
    3. Beat the egg with milk and mix into the dry ingredients with a fork to form a stiff mixture. Add a splash more milk only if very dry. Spoon onto the prepared baking tray in rough heaps.
    4. Bake for 15 minutes in the preheated oven until firm. Remove from the oven and allow to cool before serving.

    Yummy missed out peel and put in walnuts instead. Delicious  -  21 Apr 2016


    Added half a teaspoon of all spice and half teaspoon of nutmeg, replaced the peel with dried cranberries and added a small handful of walnuts as i like their texture in buns. Delicious. Versatile recipe. Next time I'll add orange zest for fresh fragrance too  -  27 Jun 2015
