This recipe makes enough icing to cover a 20cm cake.

3 egg whites
600g icing sugar
1 teaspoon lemon juice
2 teaspoons baking glycerine
red or blue food colouring (liquid or gels)

In a clean bowl, whisk the egg whites until stiff then gradually sift in the icing sugar until the mixture is glossy and thick. Add the lemon juice, baking glycerine and a very small amount of food colouring (1 or 2 drops to start). A little will go a very long way, so add very slowly until desired colour is reached. If you would like a thicker icing, use a little more icing sugar. Use or store in the fridge for up to 2 days if covered with cling film.
You can use liquid or gels for this recipe, but be sure to add just a single drop at a time until you reach your desired colour as they are very concentrated.
