About this recipe: If you are looking for an alternative to the perfect white royal icing, then try this recipe which uses a little food colouring to create a range of colours giving you endless options for icing such as pink and blue for baby celebrations or to tie into the colours for a wedding. This recipe makes enough icing to cover a 20cm cake.


Makes: 1 20cm cake

  • 3 egg whites
  • 600g icing sugar
  • 1 teaspoon lemon juice
  • 2 teaspoons baking glycerine
  • red or blue food colouring (liquid or gels)

  1. In a clean bowl, whisk the egg whites until stiff then gradually sift in the icing sugar until the mixture is glossy and thick. Add the lemon juice, baking glycerine and a very small amount of food colouring (1 or 2 drops to start). A little will go a very long way, so add very slowly until desired colour is reached. If you would like a thicker icing, use a little more icing sugar. Use or store in the fridge for up to 2 days if covered with cling film.

Food colouring

You can use liquid or gels for this recipe, but be sure to add just a single drop at a time until you reach your desired colour as they are very concentrated.
