Lewis' delectable apple cake

    This treat is perfect as a pudding drowned in lashings of custard or cream. This recipe will soon become a classic favourite!

    Serves: 6 

    • 140g plain flour
    • 100g caster sugar
    • 100g butter
    • 2 eggs
    • 250g chopped apple
    • ground cinnamon, to taste (optional)

    1. Preheat the oven to 200 C / Gas 6. Grease and line a 20cm cake tin with baking parchment.
    2. Mix the flour and sugar together in a bowl then melt the butter and stir into the mix. Crack both eggs in the bowl and beat vigorously until well incorporated. Stir in the chopped apple and ground cinnamon if using. Spoon into the prepared cake tin.
    3. Bake in the oven for 35 to 40 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool, or eat hot (preferred)!


    The cinnamon adds a lovely kick to the apple; feel free to try your own fruit or flavouring combinations.
