Energy giving cereal flapjacks

    I try and make something for my husband and kids to take in their packed lunch boxes which will not only fill them up but give them good energy for the rest of the day. I took some of my favourite recipes and came up with my own variation.

    Makes: 9 to 12 flapjacks

    • 200g porridge oats
    • 50g sultanas
    • 25g sunflower seeds
    • 25g mixed nuts
    • 50g cereal (such as a multigrain variety)
    • 100g butter
    • 50g light brown sugar
    • 2 tablespoons honey
    • 3 tablespoons golden syrup
    • 200g white or plain chocolate, chopped (optional)
    • 30g butter (optional)

    1. Pre-heat the oven to 160 C / Fan 140 C / Gas 3.
    2. Grease and line a 20x25cm (8x10 in) tin (if you don't have this size tin, a smaller or larger tin may be used but flapjacks will be thicker or thinner as a result).
    3. In a large mixing bowl, combine the oats, fruit, seeds, nuts and cereal and mix well.
    4. On a low heat, combine 100g butter, sugar, honey and syrup on the hob, and heat gently until the ingredients are melted and the sugar is no longer grainy.
    5. Remove from the heat and pour into the oat mixture. Mix well until all ingredients are coated. Transfer the mixture to the prepared tray and level with the back of a spoon, pressing down to make it an even thickness.
    6. Bake in the oven for 20 minutes.
    7. Leave to cool completely before removing from the tin and cutting into bars.
    8. If desired, whilst still cooling, gently melt 200g chocolate and 30g butter in a bain marie, then spread this over the flapjack. Add any other decorations as desired.


    Add any variety of fruit, nuts and seeds to taste. This recipe will keep for 3 days in an airtight container.
