This is a savoury scone which gets a slight flavour kick from mustard and cayenne pepper. They are delicious on their own, buttered or with leftover roasted meats and salad.
Silly easy. These came out slightly crispy and delicious. This made just the right amount of scones to share with a few friends and they disappeared in a blink. I used a standard American biscuit cutter (maybe 2 1/2" or 3") and got exactly 7 scones out of this recipe. They were a little bland straight out of the oven but my second scone that I ate had sat for about 15 minutes was beyond delicious! It's just so hard to wait.
I made with a mixture of brown and white flour and therefore had to increase the milk (used soya), added extra cheese (mixture of parmesan and cheddar) and a dash of tabasco in place of cayenne as well as the mustard. Had to increase the cooking time too. Cooked in a silicone tart tray. Recipe made 9 scones. My friend rated the scones 10/10. There are only 3 left!
I have just made these and my first observation is that with the ingredient measurements in the recipe I could only get 4 and a half 3cm deep scones with an 8cm round cutter - so if you want 8 hearty sized scones, double the quantities. I added 50% extra cheese and sprinkled the cayenne on the cheese topping, as my son and I love the cayenne, but my wife doesn't. I also added half tsp baking powder and 1tsp sugar (as recommended by earlier reviewers). The scones have risen nicely and I'm about to go and taste one . . . . . and, Yep, they're very nice. Still warm and moist. Delicious.
This was my first attempt at baking after over 35yrs of cooking. I love cheese scones and these hit the spot. One drawback was that they did not rise much but I put this down to my inexperience. My wife wants the cayenne left out next time!!!! but my 5yr old grandson who helped cut his scone in a teddy bear shape ate the lot.
At last - a straightforward recipe for scones, thankyou! For MARMITE lovers - omit the cayenne and mustard and instead stir 4 teaspoons of delicious Marmite into the milk. We had them last night with lentil, vegetable, pasta and marmite soup - lush!
I have to keep making these - orders of the other half! He is addicted and can't say I'm surprised, they are delicious. I always add more cheese though. Wonder what they would be like with a bit of Marmite?? Hmmmmm
