Mint lamb gravy

    Minty lamb gravy is the perfect addition to a roast leg or shoulder of lamb and this recipe is easy to whip together just prior to serving the roast.

    Serves: 6 

    • 6 tablespoons lamb dripping
    • 1 tablespoon plain flour
    • chopped fresh rosemary, to taste
    • 200ml to 300ml ice cold water
    • 1 tablespoon mint sauce
    • salt and pepper, to taste

    1. In a frying pan over a medium heat, warm the dripping and sprinkle in the plain flour and rosemary. Stir until it forms a paste, then gradually whisk in a little water at a time, allowing the gravy to thicken after each addition. Once the gravy has reached desired consistency, stir in the mint sauce and season well. Serve immediately.
