6 tablespoons lamb dripping
1 tablespoon plain flour
chopped fresh rosemary, to taste
200ml to 300ml ice cold water
1 tablespoon mint sauce
salt and pepper, to taste

In a frying pan over a medium heat, warm the dripping and sprinkle in the plain flour and rosemary. Stir until it forms a paste, then gradually whisk in a little water at a time, allowing the gravy to thicken after each addition. Once the gravy has reached desired consistency, stir in the mint sauce and season well. Serve immediately.
