One Pot Hake in Passata

A quick one pot recipe which can be served in the pan at the table. Serve with warm crusty bread to soak up any passata left in the pan. Add in chorizo or smoked paprika for a nice smoky flavour.

    • 2 Hake Fillets
    • 1 Red Onion
    • 1 Clove Garlic
    • 400 ml Passata
    • 1 tsp sugar
    • 1 tsp dried rosemary
    • 1 red pepper
    • 1 tbsp olive oil
    • 1 can beans (e.g. flageolet), drained.

    1. De-seed the red bell pepper, and cut into four segments. Rub a small amount of olive oil both sides, and place under a low grill, turning until done. Remove and set aside to cool.
    2. Put the remaining olive oil in a deep frying pan, sufficient to hold all the ingredients, and add the chopped onion. Fry until soft.
    3. Add the remaining ingredients, except for the hake, and simmer for 5 to 10 minutes. Season if desired.
    4. Add the hake (chopped into bite size chunks), stir in, then cover and simmer for 5 to 8 minutes, until the hake is cooked, and the flesh flakes easily.
    5. Serve with chucks of rustic bread.
