These are so amazing and completely paleo. We eat these pancakes straight out of the frying pan! Cannot get enough!
120ml hot water
4 tablespoons pure honey or maple syrup
1 tablespoon vanilla extract
140g almond flour (finely ground almonds)
1/2 teaspoon sea salt
1/2 teaspoon bicarbonate of soda
coconut oil for frying
- Whisk together the water, honey or maple syrup and vanilla. Vigorously beat in eggs. Add almond flour, salt and bicarb. Stir till just incorporated.
- Heat coconut oil in a frying pan over medium heat. Once hot, add spoonfuls of batter to the pan. Once bubbles appear on top of pancakes, flip over and cook till browned on the other side.
Very tasty but could not turn over.
More like scrambled. Will try again.
