Banana almond loaf cake

    Ground almonds make this a particularly moreish banana cake. You can up the almond flavour by using almond extract instead of vanilla, and try decorating the top of the loaf with whole or flaked almonds before baking.

    Makes: 1 banana loaf cake

    • 150g butter or margarine
    • 250g caster sugar
    • 3 eggs
    • 2 teaspoons vanilla sugar, or 1 teaspoon vanilla extract
    • 2 to 3 ripe bananas, mashed
    • 250g plain flour
    • 2 1/4 teaspoons baking powder
    • 125g ground almonds

    1. Preheat the oven to 190 C / Gas 5. Grease a 900g loaf tin.
    2. Beat together the butter or margarine, sugar, eggs and vanilla sugar until light and fluffy. Stir in the mashed bananas. Sift in the flour and baking powder and fold into the mixture. Finally, stir in the almonds.
    3. Bake in the preheated oven for about 60 minutes, or until a skewer inserted in the centre comes out clean. Let cool briefly in the tin, then turn out to cool on a wire rack.


    Dust the cooled banana cake with icing sugar or drizzle with a chocolate glaze.

    Loved this cake! Was soooo moorish - I practically ate the cake by myself (bar one slice of cake for hubby)! Hubby is a baker and gave it the thumbs up so that's got to count for something right?  -  21 Oct 2014
