Slow cooker hot cross bun loaf pudding

About this recipe: I love my slow cooker and being a busy family of four, with a fussy teen son, always hungry 5 year old son and hubby who's an independent showman, my slow cooker has really come into its own for easy to make, filling foods! This is my first recipe listing on Allrecipes, so please bear with me if I've missed anything important out.

Serves: 4 

  • 400ml milk
  • 3 tablespoons soft brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 10 slices hot cross bun loaf, such as Warburtons®
  • 100g butter or margarine

Prep:15min  ›  Cook:4hr  ›  Ready in:4hr15min 

  1. Generously grease your slow cooker with butter or margarine.
  2. Take a bowl and throw in milk, sugar, eggs and vanilla extract; mix it all up well.
  3. Take your hot cross bun loaf slices and spread each side with butter or margarine.
  4. Dip each slice of hot cross bun loaf into the milk mixture, and make sure they're well covered. Layer each slice into your slow cooker.
  5. Cook the pudding on Low for 4 hours. You can then either eat it straight from the slow cooker, or to get a golden crisp to the top slices, take off the lid of your slow cooker and place in an oven at 200 C / Gas 6 for no more than 20 minutes.
  6. Serve on its own, with custard, cream or even ice cream!
