    About this recipe: A full flavoured, tangy vinaigrette dressing to complement any seafood, salad or accompanying side dish.

    Ingredients
    Makes: 75 to 100ml

    • 1 tablespoon Dijon mustard
    • 1 tablespoon white wine vinegar
    • 1 tablespoon finely chopped fresh dill
    • 1/4 teaspoon finely chopped garlic
    • lemon juice, to taste
    • 2 tablespoons extra virgin olive oil
    • salt and freshly ground black pepper

    1. In a small bowl, combine the mustard and vinegar; stir well. Add, stirring continuously, the dill, garlic and lemon juice. Gradually, whisking continuously, add the oil. Season to taste.
    2. Serve, or cover and leave to sit for 30 minutes or so before using.

    Tip

    Can substitute thyme and/or oregano for the dill for another flavour.
