Lime and basil ice cream

Lime and basil ice cream

3 people made this

About this recipe: I came across this absolutely delicious flavour combination in Portugal recently, and simply had to try it at home. Lime is a refreshing taste in itself, but the basil just gives it an unusual edge. It rocks! Based on an easy ice cream formula, there are no eggs involved, and from start to finish it takes about 3/4 hour, if you use an ice cream maker.

Serves: 5

  • zest and juice of 4 limes
  • 225g (8 oz) caster sugar
  • 600ml (1 pint) double cream
  • 1/2 teaspoon salt
  • 1 good handful fresh basil leaves, chopped

Prep:10min  ›  Extra time:45min freezing  ›  Ready in:55min

  1. Put the juice and grated zest into a large bowl and add the sugar. Add the cream and the salt, which thickens the mixture.
  2. Freeze in either an ice cream maker or bowl in the freezer (if you use a bowl, you have to mix it up every hour or so to prevent ice crystals forming).
  3. Add the basil about half an hour into the process so that it doesn't get mashed by the paddle of the ice cream maker.

This makes about a litre of ice cream, suitable for 5 people. To get more juice out of the limes, put them in the microwave for about 20 seconds before squeezing.

Marvellous. So tangy and easy to make. I live in Portugal but haven't come across this ice cream before! Thank you. - 10 Jul 2014
