About this recipe:
This is such a flavoursome Indian dish. Traditionally a starter, although I prefer as a main. The lemon, coriander and spices make the chicken so succulent. One of my all time favourites. Serve with rice, Bombay potato, bhajis, naans.
1 medium onion
oil for frying
1 medium green chilli (optional)
1 large garlic clove, chopped
2 chicken breasts (good size), cubed into 1 to 2cm pieces
2 tablespoons tomato puree
1 tablespoon garam masala
salt to taste
2 teaspoons chaat masala
85g chopped cucumber
2 tomatoes, chopped
chopped fresh coriander
lemon for squeezing

Chop the onions and fry with a little oil in large pan until they begin to brown.
Add the chilli if you are using. Cook for 2 minutes then add garlic.
Add the chicken and continue to cook until chicken is 90% cooked (almost no pink left in the centre). Stir occasionally.
Add the tomato purée, garam masala and salt to taste. Cook for 2 minutes, stirring gently.
Add the chaat masala and cook for 2 minutes, stirring.
Add the chopped cucumber and tomatoes and continue to stir.
Add desired amount of coriander leaves to pan and squeeze in some lemon juice.
Once served, add additional lemon to taste. Tip
Chaat masala may be difficult to find, but the main supermarkets do stock it online and you can also find it in Asian shops.
I made this as a main dish, lovely flavours, every easy to make. Served with rice, naan and salad. Excellent!
