White chocolate cookies

    This recipe is very simple and does not take long to make and cook. It is ideal to make for cake sales or at the weekend with children. There are many variations of this recipe too!

    Makes: 1 dozen cookies

    • 250g butter or margerine, softened
    • 250g soft brown sugar
    • 2 eggs, beaten
    • 360g self raising flour
    • 200g white chocolate, chopped or white chocolate chips

    1. Preheat the oven to 190 C / Gas 5. Cover two baking trays with parchment.
    2. Cream together the butter and sugar until smooth. Add the beaten eggs and mix thoroughly.
    3. Sift in the flour and then fold into the egg mixture. Add the chopped chocolate and mix until it is evenly dispersed. Spoon tablespoons of the mixture onto the trays, roughly 1 to 2 inches apart. You will get roughly 6 cookies on each tray.
    4. Bake for 12 to 15 minutes until slightly soft to the touch and golden all over. They will be soft when removed (and slightly risen) from the oven - leave for 5 minutes to firm up on the tray before transferring to a wire rack.
    5. Store in an airtight container when cool. They will keep fresh for up to a week.


    Substitute half of the flour with ground almonds and replace the chocolate with mixed nuts for nut cookies; Add fruit instead of chocolate for fruit cookies; For children, add smarties or sweets in them to make candy cookies; Add ground ginger and allspice into the mix and replace the chocolate with chopped stem ginger to make ginger cookies.
