Over the rainbow cupcakes

    These rainbow cupcakes from scratch make for a psychedelic and delicious treat! Kids will love the way they look and adults will love the moist texture and delicious flavour. Perfect for birthday parties and cake sales, decorate these with a vanilla buttercream icing and you won't go wrong!

    Makes: 18 to 24 rainbow cupcakes

    • 350g plain flour
    • 4 teaspoons baking powder
    • 3/4 teaspoon salt
    • 4 egg whites
    • 300g caster sugar
    • 170g unsalted butter, softened
    • 350ml milk
    • 1 teaspoon vanilla extract
    • rainbow food colourings (red, orange, yellow, blue, green, purple)

    1. Preheat the oven to 180 C / Gas 4. Line a cupcake tin with paper cases.
    2. Sift the flour, baking powder and salt together three times. Set aside.
    3. In a separate bowl, beat egg whites until foamy. Add 100g of the sugar gradually, and continue beating only till soft peaks form.
    4. Beat butter until smooth. Gradually add remaining sugar, and cream together until light and fluffy. Add sifted ingredients alternately with milk a small amount at a time, beating after each addition until smooth. Mix in vanilla. Add egg whites, and mix well.
    5. Set out six bowls. Add a bit of food colouring to the bowls, using a different colour in each bowl. Divide the cake mixture evenly between the bowls. Stir each mixture till the colouring is evenly distributed throughout the cake mixture.
    6. Using a tablespoon, spoon the first coloured mixture into the bottom of each paper case in the prepared tin. Gently spread out to the edge of the case to create an even layer. Repeat with remaining coloured mixtures.
    7. Bake in the preheated oven for about 20 minutes, or till a skewer inserted into the centre of a cupcake comes out clean. Cool slightly in tin, then remove to cool completely on wire racks. Decorate as desired with icing, or enjoy plain!


    Sifting ensures a lighter texture, so don't skip this step! Paste food colouring works best in this recipe, but you can try liquid or gel colours, too.
