Easy lentil and carrot soup

    Tasty winter warming soup that couldn't be easier to make. Red lentils and carrots are simmered quickly so you can cosy up to a bowl in no time.

    Serves: 4 

    • 4 carrots, grated
    • 2 onions, finely chopped
    • 3 or 4 ham stock cubes
    • 1/2 bag red lentils (about 250g)
    • black pepper to taste

    1. Place all ingredients in a pan, cover with water and bring to boil. Stir once in a while until lentils are soft. Add more water if thinner soup required.

    really nice, reminds me of my mothers vegetable soup as a child. Thick, tasty. The ham stock cubes are a good substitute, to the ham "hock", we used to boil, for the base of the soup. Loving my soup and smoothie diet.  -  13 Jan 2015
