Orange chicken in the slow cooker

    I found this recipe on another website whilst looking for a slow cooker recipe for use with chicken pieces and what few ingredients I had left in the cupboard before shopping. I changed the recipe and it was delicious.

    Serves: 2 

    • 4 chicken thighs or pieces, skin removed
    • 3 tablespoons plain flour
    • 160g four fruit marmalade
    • 120ml fresh orange juice
    • 4 tablepoons light soy sauce
    • 2 tablespoons tomato ketchup
    • 1 clove garlic, minced
    • 1 orange

    1. Coat each chicken piece with flour and place in the slow cooker.
    2. Mix together the marmalade, orange juice, soy sauce, ketchup and garlic in a small bowl until well combined. Pour mixture over the chicken and turn over so all pieces are well coated.
    3. Cut off the top and bottom part of the orange. Cut the remaining orange into 8 slices and remove any seeds. Arrange the slices on top of the chicken.
    4. Cook on low for 6 hours. Serve with rice.


    You could try other fruits, juices and conserves but I've only so far tried it with orange juice and four fruit marmalade. For example you could try sliced plums with damson jam and grape juice.
